Thank you to everyone who helped us with collecting pumpkins this weekend! Planet New Canaan and NCL volunteers helped collect today at @newcanaannaturecenter and @jones_ferrante_realestate dropped off three truck loads as they did door to door pick ups today. We have filled up three trucks and a trailer and still have more pumpkins for livestock. We know the cows love pumpkins and we noticed they

We know the cows love pumpkins and we noticed they REALLY love the Jarrahdale Pumpkins. One of the best ways to recycle food or stop food waste is to use what we have- so the Planet New Canaan kitchen decided to experiment. When some of these pumpkins were recently dropped off we decided to try making soup. Let it be known, this cook has never made soup before but it was so easy and delicious!

Ingredients: 1 1/2 pounds sugar or Jarrahdale pumpkin, one garlic bulb, four carrots, two onions, one potato, 32oz chicken broth, 1/4 cup olive oil, 3/4 cup heavy cream, nutmeg, salt and pepper.

In roasting pan put cut up pumpkin (remove seeds) carrots, onions cut in halves and garlic cloves from bulb - leave skin on (remove after roasting) and drizzle olive oil over pan. Roast at 425f for 40 minutes. Pour quart of broth in large pot and bring to boil. Add peeled and cut potato and cook on simmer for 20 minutes.

Take roasting pan ingredients, scooping out pumpkin flesh and removing garlic skins and place in pot with potato and broth. Use immersion blender (use regular blender if needed) add a pinch of nutmeg and 3/4 cup heavy cream. Salt and pepper to taste. Heat up and serve.

The cows (and pigs!) will happily take all whole pumpkins but why not recycling some for yourself.
